Mango Cupcake Update...

So, they sounded really yummy, but the mango cupcakes weren't such a hit. They didn't bake up well; they were somewhat flat and the texture was more like a corn muffin than cupcake. And, the frosting tasted like straight royal icing (translation: pretty for decorating sugar cookies, but not tasty). I did use fat-free cream cheese in the frosting, so the frosting probably would have tasted better with the real stuff. But, I usually like butter in my frosting and since this one didn't have any, I still don't think the frosting would have been that great. The online picture of them looked fun and pretty, so who knows... maybe it is my poor baking skills that ruined them? I followed the recipe 100%, right down to having all my ingredients at room temperature, and I can usually bake a cupcake without any trouble, so I'm going to blame it on the recipe. Ha ha. I won't bother posting the recipe.

Ugh, I'm so sorry this recipe didn't turn out well for you. I'm not sure what went wrong with the texture in them [mine were okay]...Did you include fresh mango in yours? I left them out of mine and was informed by the original creator of the recipe that the fresh mango is what gives the cupcake most of the flavor.
