Mini Cheesecake Tarts

I was going to make red velvet cupcakes for the Fourth of July, but I didn't have enough food coloring (2 oz is a lot!). So, I decided to go with these cute little tarts, instead. I found the recipe on one of my favorite food blogs, The Daily Bite. I made one batch last night and they were so yummy that I made a double batch this afternoon. I made 24 cupcake sized tarts, and another 24 mini-cupcake size. I have blueberry topping to go along with the raspberry, but I haven't topped the others yet (I'm taking them to a part tomorrow, yes I know, a day late) so you only get a picture of the red one! I couldn't wait any longer so we had to finish at least one and taste it (okay, so we actually tasted a couple). I'll take a picture of the finished red & blue display tomorrow. I think it'll look so cute and festive.

I am still going to remake those mango cupcakes, just not sure when. As for the red velvet cupcakes, maybe I'll do those for Pioneer Day.
