So, I am going to try the mango cupcakes again. Obviously the recipe can work, and turn out well, because other people have done it and posted about them on their blogs (see my link to Erin Does Cupcakes). So, what's my problem? I don't know, but I actually dreamed about these mango cupcakes last night. I can't remember the dream exactly, but I woke up totally bugged that they didn't work for me. So, I am going to try again. I have to run to the store to get a mango, more mango nectar, and a few other things, so it might not be today, and probably not tomorrow. But, I will try them again. And when I do, I'll be sure to let you know how it goes.
As for the frosting, next time I am going with 100% real cream cheese, none of this diet, light, fat-free crap. I am 95% sure the frosting will be better that way, but I still don't know if I will love it. It was mighty sugary. I think I will also try making another type of frosting, just to see if it works. Oh, and I am going to make them mini this time. That is how Erin made hers, and I think they'd be really cute that way.

So, I was just going to post about my family's cup cake craze! We are so into cupcakes lately. My mom has the most AMAZING recipes for orange and lemon cupcakes! I know those flavors might not sound the greatest but believe me...yum. Tomorrow she is trying a coconut cream cupcake. I will have to post the recipes. There is just something about a cupcake that makes me happy!
